The 1655 brand of Gruyère AOP was created to distinguish the highest-quality Gruyeres. To qualify for the 1655 brand, a team of external experts rigorously test a dairy’s cheeses every month and grades them on a scale up to 20 points. Gruyère AOP Le Crêt has a five-year average of 19.67 points and is one of only three dairies to meet the 1655 criteria.
This product is made from unpasteurised full fat cow's milk.
Made by master cheese maker Alain Cardinaux at the Aeschlenberg dairy at an altitude of 750m. Alain sources his milk from 6 small local farms and produces only 6 wheels each day.
Over many years his cheese has been consistently rated as one of the very best Gruyere's produced in Switzerland. Alain's cheese has been allocated the prestigious 1655 designation.
The 1665 Gruyere uses locally sourced salt from Switzerland’s Bex Mountains, ensuring the cheese is an authentic reflection of this unique mountain terroir. The wheels are carefully aged by Fromage Gruyere, the last remaining Affiner Of Gruyere still located In the Gruyere region.
Intense floral and mineral flavours combine with earthy aromas and a dense compact texture.
